I have a Panasonic NV-GS230EG (MiniDV), bought in 2005, but not using it so often.
I remember having a hard time to decide between MiniDV (small tape cassettes) and mini-DVD recording. The big advantage on the latter is easy handling of mini DVD media. Just finisch your recording, put it in your PC, and you're done. MiniDV tapes first have to be copied to the PC. You should consider what you gonna do with the recordings. Just show them instantly or do all the clipping and cutting (then the advantage of "instant PC use" might get less important).
For whatever reasons I decided to get MiniDV anyway (in 2005 there were just super expensive or "beta phase" DVD camcorders available).
Mine has been not too pricey, got 3CCD which means you got triple of the resolution, optical zoom, but only electronic stabilisation (optical stabilisation is meant to be much better, could make a difference when filmind on rides etc, but as soon as you try to film RnR Coaster I guess it's completely unimportant which kind of stabilisation your camcorder had when being catapulted out of the cars *lol*)
All the controls are pretty easy to use. I looked at some touchscreen camcorders (I think from Sony), but I think the concept of touchscreen is nonsense on camcorders (way too fiddly, you shouldn't wear gloves etc.). Mind got a joypad thingie, just 4 directions and a OK button, and it's even useable without using the TFT screen.
Mine got also a night mode which I never tried, and a quick record button which is nice to do instant recordings, BUT you'll need to have the device in some standby state which will need considerable amounts of power. There may be better features to have the corder ready whenever dog starts to be cute...
