Good Saturday Morning Red Team! I am heading off for the gym. 30 minutes cardio, followed by 30 minutes of weights and some core strengthening.
We are supposed to have a beautiful last day of summer here between Boston and the Cape. Not sure what is on tap for the day. I was trying to take DD and her BFF to Boston on the train to roam (shop, have a nice lunch, visit a yummy Italian Bakery to get 1 Pistachio Macaroon and get some history, Paul Revere's House). Haven't heard back from her mom though.
I love cooking/baking. So I strive to find recipes that are healthy. I don't want to rely on frozen meals often because of the high sodium. That is what is causing us so much weight. Cooking Light has some great easy recipes (magazine and website). Also Weight Watchers web site. They even have a little quiz about how you eat.
I did the 6 Week Body Makeover a while ago and believe its core concept is correct. Basically you are cutting out all processed food. Sodium is evil. Did all of you know that celery is actually an empty enemy. Yes it cures our cravings for crunch, but it is high in sodium.
Here is my Moms recipe for Stuffed Peppers: 5 WW Points
6 bell peppers (color of choice)
1 pound ground turkey
1 medium onion chopped
1 cup cooked rice (I like to use the boil in bag for convenience)
1 teaspoon chopped garlic (yes I use jarred garlic, again for convenience)
15 ounce can tomato sauce
3 ounces shredded mozzarella
salt and pepper to desired tasting
Oven to 350 degrees
Cut top center of pepper off and clean out inside. Cook in boiling water until it is in a state between crisp and just a little tender. You don't want to over cook them to mush. Drain and set aside.
Cook beef, onion and garlic until brown, drain out the fat. Add back to pan and stir in rice, salt, pepper and 1 cup of tomato sauce.
Stuff peppers with the mixture above and put them in a dish that will hold the peppers upright. Pour remaining sauce on top, cover and toss in the oven for about 45 minutes. Uncover sprinkle with cheese and cook until cheese is melted.
