something fun different for a family trip

We are heading down in a few weeks for a family trip (me, dh, dd 7 and twins 2). I always book something different to add to the fun. Birthday cakes, CRT, etc, etc. Any ideas for this trip. The fireworks cruise is too late; they are all in bed. What about a carriage ride.
