I'm losing it...I swear I subscribed to this thread earlier today! Maybe I forgot to hit send. :confused:

Anyway, re-subbing, and can't wait to take some of my own food pix in October! :cool1:
 
So how/where do I get roasted beets? Or am I supposed to roast them myself?

Very, very easy to do it yourself - I make goat cheese and roasted beet salad all the time! (mine is much better than the one at Epcot ;) )

All you have to do is cut the tops off, wash the beets, wrap individually in foil, then bake in a 375 oven until done - around an hour, depending on the size of the beet. Let them cool slightly, and the skin just slips right off.

I make an arugula and walnut (or pistachio) pesto, and drizzle that over slices of roasted beet and goat cheese, then sprinkle with whichever nut I made the pesto with.

On the topic of the one at Epcot, I find it's gone a bit downhill over the years - since the mixed greens are tossed with dressing ahead of time, they get a little more than wilty, and I don't think the dressing has all that much flavor anymore. :(

Ok, I am dying to try this but am not a huge fish fan ... I usually only eat Tilapia or flounder. Will it be too fishy for me? :confused3

Ok TiggerTails57 you gotta be straight with me here...this looks like a Mrs.Pauls or Gorton's frozen fish filet. Did it taste like one too?

It was a little thicker than the mahi mahi we are used to, but it was very good.
Freshly prepared.......if you like fish give it a try.
I have a photo of the cream cheese fried wontons we had for dessert, gotta find it!
