Nativetxn suggested I post this recipe for my favorite breakfast on the recipe board so here ya' go! I got this recipe from the lowcarbfriends site. It's simple to make and the french toast comes out looking like crepes but they taste just like french toast to us. Enjoy with sf syrup.
MOCK FRENCH TOAST
1 egg
4 egg whites
1/4 cup fat free ricotta cheese (I use part-skim)
1/2 tsp vanilla
1 tsp Splenda
Sprinkle of cinnamon
Combine all the ingredients thoroughly and pour like pancakes on a hot skillet.
Makes 2 servingsPer Serving: 76 Calories; 2g Fat (1g saturated fat); 11g Protein; 2g Carbohydrate; trace Dietary Fiber; 95mg Cholesterol; 152mg Sodium. Exchanges: 0 Grain(Starch); 1 1/2 Lean Meat; 0 Fat; 0 Other Carbohydrates
