Chocolate Mudslide
4 servings

1 cup heavy cream
1/2 cup water
1/2 cup sugar free chocolate syrup
2 tbls. cocoa powder
2 tsp. chocolate extract
1 tsp. vanilla extract

In a medium saucepan, combine cream, water, syrup and cocoa.
Bring to a boil over medium heat. Reduce heat to low; cook, stirring occasionally, 5 minutes. Remove from heat. Stir in chocolate and vanilla extracts.

Pour mixture into an 8-inch square pan. Freeze until almost solid, about 3 hours. To serve, transfer mixture to a blender or food processor and blend until softened. Transfer to glasses.

Is that sugar free chocolate <i>flavored</i> syrup? The regular sugar free chocolate seems to have too many carbs.
 
II looked at it again and it says Atkins sugar free chocolate syrup, so maybe that makes a difference??
I bought some no carb sugar free chocolate flavored syrup. I haven't tried it in the recipe yet, but I tasted it straight out of the bottle and it wasn't too good. Maybe it will be better mixed with all the other ingredients?
If not I think I'll just leave it out and up the amount of cocoa powder.
