The Ultimate Pin Survivor

Sophisticated enough for the adventurous, yet simple enough for the meekest of mouths. Without further ado, I present the Mad Hatters' appetizer...

Grilled Shrimp Bruschetta with Salsa Fresca!

Ingredients:
12 deveined, peeled shrimp
1 French baguette, sliced into 1/2-inch pieces on the diagonal
4 Tablespoons olive oil
1 Tablespoon chopped fresh herbs (basil, thyme, rosemary)
2 Tablespoons chopped garlic
2 large vine ripe tomatoes, chopped
1 jalapeno, diced
2 Tablespoons red onion, diced
juice of 1/2 lime
12 cilantro sprigs
salt and pepper to taste
Combine 3 Tablespoons olive oil, 1 Tablespoon garlic, and chopped, fresh herbs. Dip baguette slices into marinade briefly and grill until golden. Set aside. Saute or grill shrimp 1 minute or until done. Combine tomato, cilantro, jalapeno, and red onion with 1 Tablespoon olive oil and lime juice. Season with salt and pepper. Arrange 3 slices of grilled baguette on 4 plates and top with shrimp and salsa. Garnish with fresh cilantro sprigs.

Serves: 4 (appetizer) (I will of course make as many batches as are required)

Our teammate EpcotKilterFan is currently in Houston working disaster relief with the Red Cross so I am posting an entry for her this week...

For an appetizer I though the Cheerleaders might like a big plate of Hard Rock Cafe Nachos!!

These nachos come piled high with Jack and Cheddar cheese, homemade seasoned pinto beans and served with sour cream and jalapeños, homemade guacamole, and beef or chicken.

Oh.. and of course there are free Hard Rock pins for all of you!!:smooth: :smooth: :smooth:
 
THe Pinvincibles will serve the following truly refreshing and luscious drinks to enhance your dining pleasure. Combinations can be arranged to suit all taste and/or potencies! (Freshly ground coffee, latte and other after dinner drinks will be available upon request, as well as ice cold bottled water and a variety of soda choices...)

Savor your freshly squeezed, strawberry-pink lemonade,
the juicy flavor of the fresh berries just the right addition to to the slightly tart (or extra sweet - your preference!!!!!!) delight of the lemons, tree-fresh and oozing with flavor.

THe frozen lime coolers are equally yummy, however, they more resemble the taste of a bonified, correctly made only on the sandy white beaches of Cancun, margarita.

EIther drink can be pure and virginal...or if you're feeling a bit frisky, splashes of Stoli, Cuervo Gold, Captain Jack's or name any favorite brand of choice...our bar is fully stocked!

Ok, sorry for being late, but I'm a little under the weather still, had to be woken up by one of our team members. Hopefully this will suit you guys well..it's the best thing I could think of in my drug induced stupor (plus I would LOVE to be able to eat one of these right now!) I think it will be at least a few more weeks till I can conquor one.

Only the best cut of steak for our lovely cheerleaders, prepared exactly how you like of course. And if you wish, we even have mushrooms, different steak sauces, etc. to top it off!

A rather appropriate drink from the Mad Hatters.

Ingredients
6 cups fresh or frozen unsweetened strawberries
1 6-ounce container frozen limeade concentrate
3/4 cup light rum or unsweetened pineapple juice
1 16-ounce bottle lemon-lime carbonated beverage, chilled
2 cups ice cubes
Fresh strawberries (optional)

Directions
If using fresh strawberries, remove stems and caps. For frozen strawberries,
thaw the berries after measuring; do not drain.

Place strawberries, half at a time, in a blender container or food processor
bowl. Cover; blend or process until smooth. Transfer blended berries to a
large pitcher. Stir in limeade concentrate and light rum or pineapple juice.
Cover; chill until serving time.

Just before serving, stir in the lemon-lime carbonated beverage and the ice.
If desired, garnish with whole berries. Makes 8 to 12 servings.
By they way.......this recipe can be doubled..........tripled and can be made
for you cheerleaders "ALL NITE LONG"

Well, despite everyone getting <i>atleast</i> an 8 hour start on me (Hey Jeff - some of us folks were sleeping :rolleyes: ) here is my humble contribution. Knowing how there are so <b>many</b> fans of this I actually felt obligated to serve what I know the masses know and love. I therefore present from the Walt Disney World Resort:-

Le Cellier Cheese Soup

<i>Ingredients:
1/2 lb bacon cut into 1/2 in. pieces
3 celery ribs cut into 1/4 in pieces
3 cups milk
1 medium red onion cut into 1/4 in. pieces
2 tbsp butter
3 cups water or chicken broth
3 dashes tabasco
1 cup flour
1/2 cup beer
3/4 lb grated white cheddar cheese
salt and pepper
In a soup pot start to brown the onion over medium heat. When the bacon is starting to get crisp, add the onions, celery and butter. Cook until the onion is translucent. Add the flour and incorporate with the butter. Cook for 4 minutes-constantly stirring. Add the water/broth and whisk. Make sure there are no lumps. Bring to a boil then reduce to a simmer and cook for 15 minutes, stir every couple of minutes. Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk. After the last 15 minutes, turn off the heat and stir in the cheese then the beer. Add the tabasco and season with salt and pepper. If the soup is too thick you can thin it out with some milk. Serve with your favorite bread and top with some chopped scallions or chives.</i>

This will be a nice follow-up to that wonderful salad we are serving as the first course and will go great with those strawberry drinks. But I will have a little flask hidden in my pocket for anyone who wans to zing up their drink. Don't tell anyone.

Now I hope this works, I can't seem to get my stuff to showup I am sch a computer illiterate.

Here is the recipe

Ingredients
1/4 cup dry white wine
2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
4 medium skinless, boneless chicken breast halves (about 1 pound total)
4 thin slices prosciutto (about 1 ounce total), trimmed of fat
2 ounces fontina cheese, thinly sliced
1/2 of a 7-ounce jar roasted red sweet peppers, cut into thin strips (about
1/2 cup)
Fresh thyme (optional)

Directions
Prep Time: 25 minutes
Cooking Time: 15 minutes
For sauce, in a small bowl combine wine and the 2 teaspoons fresh or 1/2
teaspoon dried thyme. Set aside.
Rinse chicken; pat dry. Place a chicken piece between 2 pieces of plastic
wrap. Using the flat side of a meat mallet, pound the chicken lightly into a
rectangle about 1/8 inch thick. Remove plastic wrap. Repeat with remaining
chicken pieces.
Place a slice of prosciutto and one-fourth of the cheese on each chicken
piece. Arrange one-fourth of the roasted pepper strips on cheese near bottom
edge of chicken. Starting from bottom edge, roll up jelly-roll style; secure
with wooden toothpicks. (At this point, chicken may be individually wrapped
in plastic wrap and refrigerated up to 4 hours.)
Grill chicken on the rack of an uncovered grill directly over medium heat for
15 to 17 minutes or till chicken is tender and no longer pink, turning to
cook evenly and brushing twice with sauce. Garnish with additional fresh
thyme, if desired.

Ok gang...so sorry I am late but I had to work a very long day 10-9 very tired....picture working finally thanks to Jeanie.....hats off girl your great!!!

I choose Grilled Lobster, served with a drawn butter, a side of new potatoes with parsley, and corn on the cob.....ummmm good! Yummy just think of that smooth seafood flavor caressing your tongue, oozing with warm butter.....ooooo baby....and for the cheerleaders all they can eat...cracked by the pinvincible team......bite by bite its all yours gang....go cheerleaders.






GRILLED LOBSTER


Serves 4

If you’re not squeamish, the lobsters can also be killed by inserting the point of a sharp knife through the cross mark on their backs.

4 live lobsters, 1 to 2 pounds each
Unsalted butter, melted (optional)
Lemon wedges

1. Kill lobsters by plunging them headfirst into salted boiling water and cooking for 1 minute. Remove, and drain.

2. Place lobsters on a medium-hot grill. Cook for 8 to 10 minutes, turning occasionally to avoid burning the shells.

3. Crack a claw to see if it is fully cooked (the meat should be opaque). If not, detach claws, and return to grill for a few minutes more. Using kitchen scissors, split lobsters lengthwise by cutting along underside of tail, leaving back of shell intact. Scrape out red coral, if any, and green tomalley, and combine with melted butter for a dipping sauce, if desired. Keep lobsters warm on a platter covered with foil until ready to serve. Garnish with lemon wedges and serve with melted butter, if desired.

The Landsharks would like to present a review for the cheerleaders of what their dinner would be like if they were to vote for us. The Landsharks recognize what a valuable asset the cheerleaders are to our quest to find the elusive Autumn Eeyore pin and we wish to pay them back with a dinner to remember.. so if you are ready.. Cheerleaders, hang on to your recliners because the adventure is about to begin!!!

Your dinner will be a progressive one, traveling from one location to another enjoying dishes that made these restaurants famous. They may not always be the fanciest dishes around, but are definately among the most delicious. To begin your adventure we took the liberty of renting 4 stretch limos to take you to your destinations. Of course we realized that you would hate to leave your recliners behind so we thought ahead and secured 4 stretch - 16 passenger Mega Jet Lincoln Navigators. Plenty of room for all of you and your lazyboys.

Inside of each of these limos you will find a lovely bouquet of flowers for each of you.

Now of course we realize that these limos will not drive themselves around Florida, and it's your night so you shouldn't be worried with having to drive them yourselves so we put our heads together and came up with a few drivers for you. It cost us a ton of money to hire them.. but only the best for our Cheerleaders! Ladies, may I introduce you to your drivers?

We thought we would start the dinner off with an Appetizer. Your limos pull up to The Hard Rock Cafe outside of Universal Studios.

As you leave you are presented with gift bags from the Landsharks with souvenir T-shirts and Hard Rock Cafe pins!

Back into the limos and you head back towards Disney property for your salad. Next stop - MGM Studios and The Brown Derby!

That's right. Your next course is the famous Cobb Salad from the Brown Derby!

This famous salad is made by combining lettuce, watercress, chicory, romaine, tomatoes, chives, chicken breast, hard boiled eggs, bacon, avocado, Roquefort cheese, and of course, the Original Cobb Dressing!

After you finish your salads it's time to head back to the limos. This time you are on the road to Winterpark, Florida and to the restaurant that is famous for it's steaks, Ruth's Chris Steakhouse!

As you get back into your limos (Robin and Cherry... please stop grabbing Harrison Ford, he's trying to drive!) we inform you that the next trip will take a little longer than the others. To make the time go by fast we will be serving you dessert in the limo. Back in Virginia where I am from, we have a restaurant in Williamsburg called The Trellis.

It's a wonderfully refreshing creation of the Disney Cruiselines. They can be served with or without Rum, and the taste is simply heavenly (but can make you act a bit devilish if you drink more than one or two). A bit like a cross between a strawberry Daquiri and a Pina Colada.

Ladies.. enjoy your cruise and your coolers!!! And remember... if this sounds like the perfect meal to you.. vote Landsharks!!

Oh.. and by the way... we sprung for tickets for Harrison, Mel, Sean and Tom too.. and they brought their bathing suits!!
 
OMG, am I too late? I'm having conntectivity problems. Big storms here last night. Didn't lose power, but connectivity to our ISP has been spotty since 11 PM last night.

Wow, you lucky cheerleaders you. Even in the imaginary land I am too broke right now to ply you with such luxury........besides if you go do all that moving around who will be there to cheer the peaches on through their many water battles????? (remember we have been locked in the bathroom and seen Kali Rapids the hard way!!!!!! So, even though we are past the dead line I propose the poor mans approach to your best interests...
We could bring in very nice cms, you know the ones who allows do the best disney has to offer.... In costumes and on skates to present our meals to you while they sing the great Disney songs at your request.

The meal
Proscuitto slices, cheese, fruit and cool melon
cool raspberry soup
a buffet of crab cakes, shrimp, beef tips etc
followed by Old Kentucky Jam Cake
to drink, a large variety of flavors of iced tea

Please note that all the above items are cool and refreshing in the Florida heat, nutritious, and fairly light so you will have lots of energy to keep up with the action.

But since we are also not above bribery we all will promise to pin search all over the park for you and Create a special set of pins just for you wonderful people.

Then we will make sure you are set to see the Mk fireworks including Tinks flight and delivered to TON for parade and fireworks. I for one will rub your feet and help you get lots of character autographs.

This package is presented to you from the slow but wonderful, cheap(got to save money for August) but helpful Rolling Peaches. Thank you for your consideration.

The team members all gathered at the Transportation Center as Arizona Jeff again emerged from the shadows. Well done adventurers, the work on this challenge is complete. Behind me is a feast that you should be proud of. I now ask all of the cheerleaders and others to vote on which of these meals they would most like to eat. As with the other votes, this one shall be done via e-mail. I will ask everyone to send a message to Arizona Jeff telling me which of these meals you select. The team gathering the most votes shall be awarded immunity during this challenge. The other teams shall have a member voted out of the adventure. The vote shall last until Midnight tomorrow (June 24). Good luck to everyone. As he turned to leave, there was a cry from the crowd, "But wait Arizona Jeff! What were the results from the first part of the challenge?" Our hero turned and spoke, "The adventurers frantically worked to create their culinary masterpieces. In the end though, one team was victorious. The Landsharks won that portion of the challenge and will be granted immunity." He then turned and vanished into the darkness as everyone waited for the outcome of the challenge.
