I swear I could eat these all day and they are very easy to make
Toasted Pesto Rounds
¼ Cup chopped fresh Dill or Basil
¼ Cup Parmesan Cheese (or percorino/ Romano whatever you like better)
1 Med. Clove of Garlic or 1 tsp garlic powder
3 Tablespoons Mayo (reduced calorie or Miracle Whip)
12 French bread slices ¼ inch thick (4-5 slices bread substitute)
1 med. plum tomato chopped (sliced thin if using Bread)
1 green onion / scallion sliced
Black pepper
*Preheat broiler if using French bread (U can use toaster oven for either as well)
Combine Basil/ Dill, Cheese, Garlic, and Mayo in a bowl mix well. (I use an Oster or food processor and pulse till mixed well.)
Arrange bread slices in single layer on cookie sheet or broiler pan broil 6 8 inches from heat for about 30 seconds or until lightly toasted.
Turn slices over and spread evenly with basil mixture and return to broiler for 1 min or until lightly browned.
Remove to tray and top with tomato and green onion and sprinkle with Pepper to taste.
** When I use bread I toast in toaster till lightly brown.
Turn over and spread cheese mixture on and toast again till browned slightly.
I remove the toast and lay green onion and tomato slices and sprinkle with pepper than cut each piece in half.
