PP is correct that it is more an issue of winds at higher elevations than of winds at ground level. And also an issue of wind direction -- e.g. any fireworks debris blowing toward the 5 freeway can stop the show. But one way to get a heads up on whether the show might be cancelled/changed to MMM is to check the NWS page (San Diego office) on the day of your visit. If the Anaheim area is showing a Red Flag Warning for winds, there's a good chance the show won't go on or will be changed.How windy does the wind have to be for them to cancel Disneyland Forever, do you know?
