Per Person Food Cost

Can anyone tell me more about how they factor the "per person" food cost? Lets say I have 50 adults and 10 kids (what age is the cut off begin they two?) is the overall food amount divided by the 50 adults or the overall 60? I know they have lower priced options for kids, so I'm wondering if we will still be spending at least $125++ on the 6 year olds??

I am dreading these kid prices, I will have quite a few kids at our wedding and at least 3x 3 year olds spending $75 each is sickening when they will likely have 2 chicken fingers.
