If you had two days of no parks, what would you do?

I would add 2 park days to go along with the resort days :). Sorry if I'm no help!
 
I would definitely check out the mini golf courses! I've only done Fantasia Gardens, so Winter Summerland is definitely on my list.

If mini golf isn't your thing, the suggestions to take the ferries and resort hop is what I typically do on non-park days so I can pin trade :-)

Also, lots of food bucket list items. You can make time for a Gideon's Bakehouse cookie at Disney Springs, snag a hard to get reservation as a walk up, or just enjoy the pool and relax at the resort!
