Hotel help/suggestions

Best Western Anaheim Inn has a room with 3 doubles or queens, and possibly just a couple of those since I rarely see them when I'm checking BW.
Keep an eye on Grand Legacy, we've gotten the 2-room suite well under $200 a couple times. That has 2 queens in 1 room, double sofa bed in 2nd room. Just 1 bath. They do have connecting rooms in the main building.
If you end up with connecting rooms somewhere that don't actually connect, could you sleep with the girls and husband and son sleep in the other?
 
We stayed at the Park Vue Inn when our kids were 12 and 7 in a room with a queen and bunk beds. We found it very tight for room.
You might want to look at Embassy Suites South. They have separate bedrooms with a king bed and a sofa sleeper in the living room. It was very spacious and there would be room for a rollaway cot if they were available. Plus their breakfast is phenomenal!

ETA: Embassy Suites has Suites that have two doubles in the separate bedroom.
