Here's a great pumpkin muffin recipe:
Pumpkin 1 cup
Eggs, beaten 2 each
Water 1/2 cup
Flour, Allpurpose 2 cups
Salt 1/4 teaspoon
Sugar 1 1/2 cup
Baking Soda 1 teaspoon
Baking Powder 1/4 teaspoon
Cinnamon 1 teaspoon
Nutmeg 1/2 teaspoon
Ginger 1/2 teaspoon
Cloves 1/4 teaspoon
1. Preheat oven to 350 deg.
2. Blend pumpkin, egg, water, and oil in medium bowl
3. Sift together the flour, salt, sugar, soda, baking powder, cinnamon, nutmeg, ginger and cloves
4. Add dry ingredients to the pumpkin mixture. Stir well until combined
5. Bake for about 30 minutes.
It seems like a lot of ingredients but it is really an easy recipe. I use this for my middle school classes as a lesson in measuring and terms. They smell great while baking and I never have leftovers!
