hi does anyone have a good recipe for pumpkin bread? my daughter asked me to make some, i bought a can of pumpkin and i don't have a arecipe can anyone help? thanks!!!
 
This is a family favorite at our house!!


Pumpkin Bread

1 Cup oil
2 Cup sugar
2 Cup pumpkin
4 Eggs
3 Tsp cinnamon
1 Tsp nutmeg
1 Tsp allspice
2 1/4 Cup all purpose flour
3 Tsp baking powder
1 Tsp salt
1 Tsp soda

Mix as listed. Grease and flour pans. Makes two loaf pans or 1 tube pan (bundt). Bake at 300 degrees for 1 hour.

Here's a great pumpkin muffin recipe:

Pumpkin 1 cup
Eggs, beaten 2 each
Water 1/2 cup
Flour, Allpurpose 2 cups
Salt 1/4 teaspoon
Sugar 1 1/2 cup
Baking Soda 1 teaspoon
Baking Powder 1/4 teaspoon
Cinnamon 1 teaspoon
Nutmeg 1/2 teaspoon
Ginger 1/2 teaspoon
Cloves 1/4 teaspoon

1. Preheat oven to 350 deg.
2. Blend pumpkin, egg, water, and oil in medium bowl
3. Sift together the flour, salt, sugar, soda, baking powder, cinnamon, nutmeg, ginger and cloves
4. Add dry ingredients to the pumpkin mixture. Stir well until combined
5. Bake for about 30 minutes.


It seems like a lot of ingredients but it is really an easy recipe. I use this for my middle school classes as a lesson in measuring and terms. They smell great while baking and I never have leftovers!
 


Here's another variation I use all the time. It is from Libby's:

Pumpkin Cranberry Bread


3 cups all-purpose flour

1 tablespoon plus 2 teaspoons pumpkin pie spice

2 teaspoons baking soda

1 1/2 teaspoons salt

3 cups granulated sugar

1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin

4 large eggs

1 cup vegetable oil

1/2 cup orange juice or water

1 cup sweetened dried, fresh or frozen cranberries



A moist and delectable pumpkin bread with tart fresh cranberries. Have a slice for breakfast or enjoy as an afternoon snack.

Makes 2 loaves




PREHEAT oven to 350° F. Grease and flour two 9 x 5-inch loaf pans.

COMBINE flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and orange juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries. Spoon batter into prepared loaf pans.

BAKE for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

FOR THREE 8 x 4-INCH LOAF PANS:
PREPARE as above. Bake for 55 to 60 minutes.

FOR FIVE OR SIX 5 x 3-INCH MINI-LOAF PANS:
PREPARE as above. Bake for 50 to 55 minutes.
