Cod Recipes?

Anyone have any good cod recipes or marinades for cod? I have never really cooked fish and bought some cod and need to know a good way to cook it.
 
I usually make a miso marinade and then broil them or a soy sauce, sugar, and ginger marinade.
 
I got one years ago from Galloping Gourmet. Poach cod in Milk. Remove the cod and make a white sauce out of milk. pour it over the cod when it serving it. Place a few slices of Kiki Fruit on top. It really delicous.
 
I haven't had cod for years! Lately we've been making our fish (catfish & basa usually) by spraying the pan with oil, spreading pesto over the fish & topping with shredded mozzarella before baking. It's sooooooooooo good!!!

I did some quick checking & couldn't find a recipe using pesto with cod. But I did find that it's similar in flavor to halibut & there are recipes using pesto with halibut. I just use the jarred pesto sauce...Progresso I think.

Batter-Fried Fish

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 pound fresh or frozen cod fillets
2 tablespoons all-purpose flour
2 teaspoons cornstarch
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
1/3 cup club soda
oil fro frying
1/4 cup orange marmalade
1 tablespoon prepared horseradish -- (1-2)

Rinse fillets in cold water. Pat dry.
Coat with flour.
In a shallow bowl, combine the cornstarch, seasonings and soda.
In a heavy skillet, heat 1" oil.
Dip floured fillets into batter. Fry over medium heat for 2-3 minutes on each side or until the fish flakes easily with a fork.
Combine marmalade and horseradish. Spoon over fish.

Fast and Easy Cod

Cod
Bisquick
salt
lemon pepper
1 teaspoon margarine
paprika

Season Bisquick with salt and lemon pepper (Lots of lemon pepper).
Roll cod (or other firm-fleshed fish) in Bisquick mixture.
Place in nonstick baking pan and dot with margarine.
Sprinkle with paprika.
Bake at 400º for 20 minutes.

Homemade Fish Fingers

1 pound frozen cod fillets -- partially thawed
1/2 cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon minced fresh parsley
1 teaspoon grated lemon peel
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1/4 teaspoon garlic salt
1/2 cup 1% buttermilk
1/4 cup plus 2 tablespoons all-purpose flour

Cut fillets into 3/4" strips. Set aside.
In a shallow bowl, combine bread crumbs, Parmesan, parsley, lemon peel, paprika, thyme and garlic salt.
Place buttermilk in another bowl and flour in a third bowl.
Coat fish strips with flour. Dip in buttermilk, then coat with crumb mixture.
Place on a baking sheet coated with nonstick cooking spray. Refrigerate for 20 minutes.
Bake at 425º for 15-20 minutes or until fish flakes easily with a fork. Let stand for 2 minutes before removing from baking sheet.

Viennese-Style Fish Fillets

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 pounds skinless fish fillets (about 1/2" thick) *
Dijon-style mustard
2 tablespoons lemon juice
3/4 cup finely chopped fully cooked ham
1/2 cup sour cream
2 tablespoons flour
2 tablespoons finely chopped dill pickle
1 tablespoon finely chopped capers
1/4 cup soft bread crumbs
1/4 cup grated bread crumbs
1/4 cup grated Romano OR Parmesan cheese

Spread fish with mustard. Sprinkle with lemon juice.
Arrange fish on a greased rack in a baking pan.
Combine ham, sour cream, flour, pickle and capers. Spread over fish.
Bake, uncovered, in a 450 degree oven for 10 minutes.
Combine bread crumbs and cheese. Sprinkle over fish.
Bake, uncovered, 5-10 minutes more or until fish flakes easily when tested with a fork.

NOTES : * Fish suggestions: cod, flounder, orange roughy, pike, sea bass, sole or whitefish.
 
My favorite way to cook cod was found in a Fine Cooking in the last year or two. It sounds odd if you have never tried them, but they are SO good.

Basically you beer batter strips of cod and fry. Then you make tacos with flour tortillas, shredded cabbage, and spicy tarter sauce. It is incredible. You can probably order the issue off there website. It was in an authentic taco issue.
