Candy Cane Recipe from chyrels.......

1/4 tsp. cream of tartar
1/2 Cup light corn syrup
1/2 Cup water
3/4 tsp. peppermint extract
1 tsp. red food coloring
2 Cups sugar

Method:
Mix together cream of tartar, corn syrup, water and sugar. Stir over
medium heat until sugar dissolves. Cook to 265 degrees (very hard ball
stage). Remove from heat and add the peppermint.

Divide the mixture in half and add food coloring to one part. Pour on
greased cookie sheets. Pull each apart separately into ropes.

Twist red part around white. Cut into 8-inch lengths. Form into candy canes.

I think I'll try this with DD - except I'm going to try a different flavor of extract. DD really detests mint. I absolutely love it, but shouldn't eat it.:rolleyes: :eek:

she teaches is doing it in a few weeks......I very rarely get past the hard ball stage......I love to sample the hard candy before we get to do anything with it......rofl'
