We purchased a 12 day, with 10 day ticket stay with the summer quick service deal. After looking at costs to add hopper and memory maker, thinking it might not hurt to go with an annual pass. Is it even possible to upgrade to an annual pass with the current package?

You wouldn't be able to before you arrive, but once you're there, absolutely.
Yup.
The upgrade can be done at WDW as early as your check-in day.
The upgrade will then not negatively impact your room, meal plan or FP+ reservations.

HERE's how upgrades work.

Is photopass/memory maker instantly ready then upon upgrading?

Yes. But for some reason, I’ve see a few people that said theirs didn’t automatically work like it should. If this should happen to you, you can call or stop by one of their help desks and the PhotoPass people can get it worked out for you.

if you had memory maker as a part of your ticket upon upgrading to annual pass would it be gone?

Guests purchasing/upgrading to AP can get a refund for a pre-purchased MM.
The way the MM was purchased can affect the "ease" of the refund process.

My family just upgraded to APs a few weeks ago at Magic Kingdom Guest Relations. We took castle photos as soon as we walked into the park and they were available and not watermarked just minutes later. Hopefully you will have the same experience!
