May is not beach weather in NJ. Sept is better for crowds and weather. AC is not my idea of a destination
OP if you can do it I would vote for mid- June or mid-September . Not only due to the weather but what is open & crowd levels. That is when DH & I go to Avalon.
Most of the Philadelphia ( including the PA & NJ suburbs )area schools
close by the 3rd week of June and open by a day or 2 after Labor day. But by Memorial Day weekend most restaurants/places are up and running .

I've been going to Atlantic City almost every year for conventions. If there was a show/comedian/musician are the only times I would consider staying over.

Borgata/Water Club is the nicest hotels but it's not on the Boardwalk.
 


I know what's in my area. I want to leave my area. I want a "getaway". No beaches in DC or Baltimore either. :)

BTW, MGM National Harbor is really nice! We saw Cirque Holidaze there a couple of years ago.
 


It sounds like you have a lot of great activities planned, and I hope you have a wonderful time!

One thing that I would recommend is checking out the boardwalk. The Atlantic City boardwalk is a classic attraction and has plenty of shops, restaurants, and amusements to keep you entertained. Additionally, if you're interested in gambling, there are several casinos located along the boardwalk where you can try your luck.
 
I know this is an old thread but we enjoyed the Hard Rock hotel/casino. I think it was associated with a former president before.
