Any good zucchini bread recipes???

I am looking for a good zucchini bread recipe...but one that is also fairly easy to make. Any recipes are appreciated!!

Chocolate Chip Orange Zucchini Bread

3 eggs
2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
1 cup semisweet chocolate chips
1 tablespoon orange zest
3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg

Sift together flour, baking powder, soda, salt, and spices.
In a large bowl, beat eggs until light and fluffy.
Add sugar, and continue beating until well blended.
Stir in oil, vanilla, zucchini, nuts, chocolate chips, and orange rind.
Blend in sifted ingredients.
Turn batter into two greased 9 x 5 inch loaf pans.
Bake at 350 degrees F for 50 minutes, or until bread tests done.
Remove loaves from pans, and cool.
Chill before slicing.

Chocolate Wave Zucchini Bread

1/3 cup shortening
1 1/3 cups white sugar
2 eggs
1 1/2 cups grated zucchini
1/3 cup water
1 teaspoon vanilla extract
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon pumpkin pie spice
1/3 cup chopped walnuts
3 tablespoons unsweetened cocoa powder
1/3 cup mini semi-sweet chocolate chips

Preheat oven to 350 degrees F. Grease one 9 x 5 inch loaf pan.
In a large bowl, cream shortening and sugar together. Mix in eggs. Add zucchini, water, and vanilla; stir.
Blend in flour, baking soda, salt , baking powder, and pumpkin pie spice. Stir in nuts.
Divide batter in half, and add cocoa powder and chocolate chips to one of the halves.
Pour plain batter into bottom of the loaf pan.
Pour chocolate batter on top of plain batter.
Bake until wooden pick inserted into center comes out clean, about 1 hour.
Cool 10 minutes, and remove from pan. Store in refrigerator.
 
Here's the recipe I always use:

Zucchini Bread

3 eggs beaten
1 cup cooking oil
2 cups sugar
2 cups zucchini, grated
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
½ cup chopped nuts (optional)
OR use: ½ cup chocolate chips

Preheat oven to 325 degrees. Grease 2 loaf pans. Beat eggs; add oil, sugar, grated zucchini and vanilla. Cream together. Sift together dry ingredients; add to wet ingredients. Blend. Pour into loaf pans. Bake for 1 hour.

These muffins are nutritious, low in fat, and most
important of all, taste delicious! Prep Time: approx. 10
Minutes. Cook Time: approx. 20 Minutes. Ready in: approx. 30
Minutes. Makes 12 muffins (12 servings).

2 1/4 cups all-purpose flour
1 cup white sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup shortening
1/4 cup sour milk
2 eggs, lightly beaten
1 1/2 cups shredded zucchini
1 teaspoon vanilla extract
1/2 cup chopped walnuts
1/4 cup brown sugar


Directions
1 Preheat oven to 350 degrees F (175 degrees C). Grease
and flour a muffin pan, or use paper liners.
2 In a large bowl, combine flour and sugar. Stir in
baking powder, baking soda, cinnamon, nutmeg and salt. Cut in
shortening until mixture resembles coarse crumbs. Make a well in the center, and pour in milk, eggs, zucchini and vanilla.
Fold in walnuts. Fill muffin cups 2/3 to 3/4 full. Sprinkle
tops with brown sugar.
3 Bake in the preheated oven for 15 to 20 minutes, or
until a toothpick inserted into the center comes out clean.
Allow to cool.
