We are looking for a delicious breakfast not in the park’s for our last day, it will be for 2 adults. Any suggestions?

Quite a few times we've done Boma's at the Animal Kingdom Lodge. We also have done Kona Cafe and Trails End. This year we have scheduled The Wave at the Contemporary.

My DD (19) and I really enjoyed the Ale and Compass at the Yacht Club for breakfast in December 2019. They had a nice menu and included a self serve area with cheeses, breads, fruits, meats and other items. The food was very good!

Is the wave quick service? Or would we need a reservation?

You probably need, or should have a reservation for the Wave.

Another recommendation is Chef Art Smith's Homecomin' in Disney Springs. We set it brunch our last day of our trip, found it a great time and nice way to wrap up our trip, and yes you need reservations.

Our last day of trip we did grand Floridian cafe and enjoyed it. Favorite breakfast from trip was topolinos character meal; very much enjoyed the food and the character interaction was nice even with social distancing.

Boma was great, but it is currently unknown when it will be open for business again. Same with Trail's End. The Wave is a great choice that is still open.

Probably makes a difference where you are staying and/or if you have a car. If staying at one of the monorail resorts, it is fairly easy to take a ride to one of the other open resorts. If you don't have a car, then your choices would tend to be something within walking distance of where you are staying.

Whispering Canyon Cafe. Get the all you can eat skillets, each get a different one and you can share off each others. We were just there the week before Christmas and they had the best Mickey waffles I had ever had.

Our family really enjoyed the 'Ohana Best Friends breakfast. Having said that, we went to that breakfast with a 7- and 2-year-old, so consider the source. :)
If you like character interactions, it's a good one. Even though I am an adult, I like the character interaction. I realize it's not everyone's cup of sunshine, however.

Whispering Canyon Cafe at WL is a good choice, I’ve eaten there plenty of times in the past and its always been amazing. It’s got lots of different choices (including the family style options), so there’s definitely going to be plenty of options.
It was our best all-around meal last trip, WL is awesome, CM's at WL and then WCC some of the best work together crew of the whole trip and the food was super good we got the Carnivore and Lite skillets so best of everything. The only Downfall was the Bloody Marys were just ok.

Ale & Compass was a nice Breakfast too.
