Awesome new Christmas treat!

I know this is not the recipe board but this is also about holiday treats, so I'm posting it here.

I adapted a recipe for cake balls into Red Velvet Snowballs. It is so easy and it was a huge hit last weekend.

Here is how I made them:

You will need:
red velvet cake mix, baked
cream cheese frosting, purchased
white dipping chocolate


Bake a red velvet cake mix according to the directions on the package. I made 2 round pans and froze the extra cake for another time. Let the cake cool completely.

Once cooled, crumble one cake into small crumbs. (Note: you may be forced to eat the edges if they don't crumble well..... yes.... just another sacrifice we make for the holidays.....;) )

Mix in 1/2 can of cream cheese frosting until it is like a soft dough.

This is the only hard part. Roll into meat-ball sized balls and let sit on a wax paper. They will be sticky and you will have to wash your hands frequently. Let sit for 2-3 hours or so until they start to get a little crusty to hold their shape.

Melt about 1 pound of white dipping chocolate. Dip the cake balls in the chocolate and let set. For decoration, I grated a few white chocolate wafers to resemble snow and then sprinkled then on the wet chocolate to look like snow balls.

One cake made about 25 balls for me.

Just another way to have your cake and eat it, too, at Christmas!


(You can also do this with a white cake mix and add red or green food coloring if you don't like red velvet cake.)

Do you think they would travel well? I'm shipping some cookies to friends and family and would love to include these!

If you package them with extra padding, they could ship OK. I would be sure to have a nice, thick coating of white chocolate. What I have in the picture would be good.

They will certainly not dry out or crumble in transit. Even if they are a little cracked, they will taste good.
 
I found a similar recipe where they mixed it all the same way, but before you dip it in the chocolate, you put a stick through the ball and make a cake "popsicle". I'm definately making these!!!

Jen0610, I see you are in Fort Wayne. I used CK products super white coating for these. Regular would work, too, but the super white really makes the red velvet "pop".

Claudia, do you think that these could be frozen? Either I could whip up the cake and icing balls and freeze and then dip before serving or freeze the entire things? I simply am running out of space everywhere and time to plan out all the goodies.

Also a friend made cake balls using german chocolate cake mix with the pecan icing stuff. When she was forming the ball shapes she wrapped cake around a cherry and then dipped in regular chocolate.

Just a FYI for another decadent treat.

DH discovered Red Velvet cakes this year-LOVES them. I bet he will make these this year. I have a Word file that I just copy and paste all the DIS recipes I want to-super easy storage :thumbsup2.

I do this too! DH was looking for some file the other day and wanted to know what the heck document name Disrcps was. He just shook his head and told me I has a serious disney issue that needed to be addressed.

I don't think he found the FNrcps (food network) or the PWrcps (PioneerWoman) documents. Wonder what he'll say about those.

I LOVE the Country Kitchen. I can still remember how the place smelled when they were in their place over on Wells St. My SIL drools over all the candy making stuff they have.
 
You could definitely freeze them BEFORE dipping. Let them come to room temperature UNCOVERED before dipping. If you dip them too cold, they will expand as they come to room temp and crack the chocolate.

I am candymaker and had a gourmet candy business several years ago, so I have some experience with these things! A very slight crust will make dipping much easier. It will blend in with the chocolate and you won't get any "crunch" at all.

As far as any "serious disney issues", you are preaching to the choir here! If you have dippid balls that are uneven sizes, you make a Mickey icon with 2 small and 1 large candy. Just thinkin' out loud.....
 
Do you think I could use a cookie scoop to shape the cake balls? I really want to make these, but I have "issues" about my hands getting goopy.

I don't know if a scoop would work.

I made Halloween ones with my kids this year, and the boys loved getting their hands into the gooey cake! We made witches, pumpkins, and ghosts from the bakerella website.

I was thinking the same thing. Make some smaller ones and attached them to a bigger one with a bit of the white coating to make it hold.
