So what is the best way to get castle pics? My daughter uses a wheelchair and will refuse if too many people are”watching”.
There really isn't one anymore unless you book a ticketed Early Morning Magic event. Your best chance otherwise is to book a PPO breakfast as early as possible. For a 9 AM park opening, book an 8 AM breakfast. Arrive at the park by 7:30 (security is *typically* open by then), stay to the left and they *should* be allowing those with dining reservations in around 7:45. It won't be as crowd-free as it used to be but it will be considerably less crowded than at actual park opening. But, there is no guarantee that they have not started letting guests without reservations in, either.

I put *typically* and *should* because it can change any day for any number of reasons (security gets a late start, rope drop crowd is very large and they start moving people in early etc.).
 
We havent been to Disney in 5 years. What do you mean about not getting Main Street to yourself? Do they not allow the photos in front of the castle before the breakfast anymore? That would be our whole reason for scheduling CP breakfast.
Main Street now opens at 8:00 in the morning, so the crowds enter Main Street at the same time you are entering for your pre park opening breakfast, hence no real chance to get photos with a completely empty Main Street. Therefore, that would be a bad reason to schedule CP breakfast. You would do better to just be there before 8, try to be towards the front of the line so you are one of the first people in the park, then make a beeline for the hub, and try to get your photos before the rest of the crowd gets there. At that point, you could backtrack to the Starbucks and grab breakfast there before the park opens at 9.

Yes. A PPO breakfast might get you a very brief head start, but not enough that I'd spend the $$ unless I wanted to have breakfast there in the first place.
