What are some meals that you provided/are providing for people with allergies, such as Coeliacs, or what vegetarian meal options have you looked at?

I've spoken to my coordinator and he's told me that the chefs are pretty much able to create anything I ask for, which doesn't help because now I need some sort of inspiration!
