We pass this a few times a year on our way to So Cal. My DS loves roller coasters so it always catches his attention. Is it worth a visit? DD and I are not thrill riders, is there anything for us there? Or anything we could do in the area? We could add on a night on one of our trips for DS to go with DH but I’d need something for DD and I to do.

There's not a whole lot to do if you aren't into thrill rides, but your DS will love it. There's a few rides that are doable to me, like gold rusher, ninja, and the water rides, but I usually drop DD and her friend off and off and go home or go shopping in the area. You might consider dropping him off and heading to Griffith Park for the LA zoo or other attractions to kill some time. Another option if you go during warmer months is to visit the waterpark there.

We spent some time at a mall in Valencia:

I also found this for shopping in the area:

It mentions Tejon Outlets, but that's about an hour north. I'd probably go into the LA area for more shopping. There's an Ikea in Burbank - I could spend hours there, lol. There's a big mall in Glendale, too. https://www.glendalegalleria.com/en.html

When we dropped the kids off my mom and I really enjoyed breakfast at Egg Plantation but be warned - it's a HUGE plate of food. We could've shared an omelet and still had leftovers. http://www.eggplantation.com/

The main attraction is definitely the thrill rides and that's the only reason I'd recommend going. The kids area is mostly just carnival rides and the water rides are nothing special, food is just basic theme park food. Shopping somewhere while your DH and DS go sounds like a much better idea!

Thanks @oakleycat! That’s what I was afraid of. From the website and the view as we pass by it looks like it’s really for roller coaster riders.

Mostly big coasters but there are other rides. Bumper cars, log flume, scrambler (carnival style spinning ride), swings, tilt a whirl.

Knotts Berry Farm would be a better choice. Plenty of big coasters and thrill rides for DS. But also several tamer rides for you and DD. Log Flume, Mine train, rapids ride, bumper cars, 3D laser game ride, a few shows depending on time of year.
