I've tried various ways of freezing peaches and am still searching for the ideal method. Does anyone have recommendations? Do you blanche the peaches before peeling? I've sliced and frozen them on a cookie sheet before. Thanks.
I used to peel them, slice them and mixed them in a bowl with a sugar syrup (used fruit fresh in this too), then dished into plastic containers and freeze. This works very well and they taste fresh when you defrost and serve them.
