I made a huge tray of it for Thanksgiving
First, for me, it’s better to make individual trays. Not try to double anything.
For each tray. Cook macaroni to just under done. Make roux with butter and flour. Add cream or milk to the consistency you want. Add a block of cream cheese and stir until melted. Add cheese. I like a combination of cheeses.
Now I add it all together In layers A layer of Mac, then some of cheese sauce and stir together, add some shredded cheese and I like to add provolone in the layers. This way my Mac and cheese is well incorporated and there is extra cheese added throughout. At the top, I add shredded cheddar and some breadcrumbs.
Don’t bake until day of and as close to serving as possible.
