I love stuffed eggplant.
Cut the eggplant in half the long way. Scoop out the insides.
Dice an onion, mushrooms, garlic and the inside of the eggplant.
Sautee the onion and mushrooms. Add garlic and eggplant. Season with pepper and paprika. Once all is soft remove from heat and add about 3/4 cup bread crumbs.
Put mix into eggplant and bake for 35 minutes at 350
