Well, you have a couple of choices.

You can just go ahead and make your Remy reservation. And, if it doesn't match up with the rotation you get, go to either the Remy dining changes or MDR dining changes desk once onboard and change it.

An alternative would be to make a request on your reservation for, say, Animator's on night 1, then make your Remy reservation for either night 2 or 3.
