The ship is docked in Cozumel for 12-and-a-half hours. Even if a game of mini-golf took you 9 hours (a half-hour for each of 18 holes), you'd still have 3 hours to spend at the Park...

After golfing, you should easily be able to take a cab to the park. We didn't do the golf part, but we cabbed over there for the day. The cab rates are pre-determined and posted at the cab stand near the ship. There was a line of people waiting for cabs when we were ready to return, so we had to wait a bit, but not unreasonably long. A new cab pulled up as soon as the one in front of it filled.
If you are adventurous, try the sea lion swim. I had no problems getting a walk-up appointment for that.
