Booking window opens in two days- What should we do?

We're first timers going on the 7 day merry-time Christmas western Caribbean. Our booking window opens in two days. From what I've read the members and people with perks will have grabbed most stuff, but what should we try to look for? (I'm not even sure what all this means :)

You should book in order of importance to you, whatever that may be(excursions, Palo/Remy, princess/Frozen meets, tastings, spa, ). If something you want is full, check when you get on the ship, they often have openigs.
 
The only thing you have to book is your online check in time. Everything else is just based on what you want to do but none of it is necessary and won't make or break your cruise. And don't worry not everything will be booked out.
