From previous experience, the Theme Parks are not terrible, but as others might mention, there is really no "slow" time anymore. Parks are usually more crowded on the weekend because of locals, I find Fridays/Saturdays particularly busy in Epcot but weekdays you should be fine.

If you have a Package Reservation, as you stated with having a Dining Plan, your friend will need to pay for each night for the Dining Plan, not just for when they are visiting. The Guest can not be added to a Package Reservation and not pay. Of course, you can speak to the Reservations/FD...

While it will be an absolute madhouse, the above poster is correct. MK has not reached a closure capacity in a long time, you should be able to enjoy a nice rest and then head into the park for a great time!

A little late here and I am sure most have mentioned, but for Disneyland their big issue was all of the blocking of AP Guests. I would think they would have removed those by now, but I am sure Disney, being Disney they are formulating something to being attendance back.

In my opinion the Star Wars fireworks are probably one of the best on property so for night time shows I would prefer HS over AK. However in terms of rides and things to do I would prefer AK as Expedition Everest is awesome at night and Pandora is gorgeous at night as well.
