The What's For Dinner Thread - March '11 (recipe index in OP)

I almost forgot. I have a bunch of green tomatoes. Besides cutting them up and frying them what else can I do?

There's an awesome green tomato chutney in one of the Moosewoods....

GREEN TOMATO CHUTNEY

Ingredients

1 kg green tomatoes
2 Tbs freshly chopped ginger
2 cloves minced garlic
1/2 tsp mustard seeds
1 tsp ground cumin
1 tsp ground coriander
2 tsp salt
1 cup honey
1 cup cider vinegar
cayenne to taste

METHOD

Chop the tomatoes
Combine everything. Bring to a boil, simmer one hour or so, stirring now and again. , Cool before packing into jars.

First- I also hope that you both avoid the colds. There is one going around here that seems to linger no cold for you!!!!!!!!!!!!!!!!!!!!!!!!!!

I have made this relish for over 30 years, it is a great topping for hot dogs

1/2 bushel green tomatoes
5 pounds onions
1 pound red pepper
4 pounds sugar
2 TBS ground allspice
1 1/2 quart white vinegar
1 tsp ground cloves
2 hands-full salt
1 tsp cinnamon

Grind tomatoes, onions and red peppers
Add vinegar and seasonings
Boil 20 minutes and put into hot sterile jars
process to seal.

I use an old hand grinder I got from my Memere and I remember letting the ground veggies drain in a colander for a while to remove the excess water.

Aimee, nice potato chips! Another yummy thing to do is to toss them with some very finely minced rosemary and garlic once they are out of the oil. I make those around Christmas time--it is a good snack.

I'm in the second week of my staycation and whilst the lack of paid work is great, I'm actually really tired from all the running around. Seems like a more activity than I had planned. One more week of 'R&R' and I return to the sedate pace of working! :laughing:.

Tonight we're having grilled thin crust pizza. DH is putting tons of meat on his, of course, and I'm still deciding. I may go more Indian on mine.

Becky- Risotto is one of my favorites, not something I make to often- I have portion control issues! If you get a chance could you remind me how to make beef short ribs. I have a lot from when I ordered 1/2 a cow and yours always looks so good.

PIO- I have looked high and low for palm sugar. The thai restaurant by us has raised their prices too much and the portions have gotten smaller so I've been making my own pad thai, of course it's no where near as good as the restaurant, but it is too much money and we are still hungry after. My recipe calls for palm sugar and I just can't find it. I did finally find tamarind paste, that was a search. I've never had tapioca but I've always thought the little pearls look fun to eat.

Nancy- Maybe if your still packed that just means you should go on another vacation!

I've got ribs cooking in the crockpot (because I'm home most of the day to watch it!) and I'll finish them off in the oven. I have a spinach pie from Trader Joe's that I'll bake off to go with it. Enjoy the rest of the day all!

Tell you the truth, I don't remember :confused3 I always packed in in pint jars but I used to more than one recipe at a time.

It is miserable here. I took advantage of a break in the clouds to run tot he store for groceries and do a few errands. I planned on pork chops but made some chicken noodle soup and Buddy wants that for dinner with chicken sandwiches. Fine by me :thumbsup2

Yes, Beck and I made it, my brother grilled it. It is easy. You definitely could make it.

We are having wonderful weather. It is going to be in the mid to high 70's through the weekend.:cool1::dance3:. This is my kind of fall. I am a warm weather kind of girl. I wish I could bottle this for January.

I think I will cook tonight something on the grill. Perhaps chicken and grilled veggies.

So, I'm home. Still in paperwork hades at work.

J and I both went to the dentist today. He got a clean bill of health. And his teeth are feeling okay from his new bottom braces yesterday.

But, I'm having a TON of difficulty with that crown/root canal I had last month. But, x-rays aren't showing what's going on. So, now I have to go see an endodontist. :headache: In the meantime, Owwwwwww.

Dinner tonight was cajun boil, with sausage, taters and corn...all courtesy of my lovely wife.

Nancy - that chutney recipe sounds delicious! I'm thinking of growing tomatoes this year and am just waiting for November before planting some. I might be using that recipe next year sometime.

But for the pad thai, are you substituting with brown sugar? That's what I make mine with......or even normal white sugar.

Nancy Thank you for your recipe as well. Both look really good but I only have a small bunch but not any that are fry worthy. I may have to just make a small batch.

Tonight I swung by to get an estimate on some car repairs.:sick: I thankfully can do it in steps but I would rather not. I am not ready for monthly payments either.

Tonight is grilled chicken rice and fruit.

Bacon Burgers with Bacon Onion Balsamic Jam
For the topping:
4 thick slices bacon, chopped into ½-inch pieces
1 large yellow onion, thinly sliced
Kosher salt and ground black pepper
1/3 cup balsamic vinegar
½ tsp. Dijon mustard
1/3 cup water

For the burgers:
2 thick slices bacon
1½ lbs. ground beef (85% lean)
½ tsp. Worcestershire sauce
1 tsp. kosher salt
½ tsp. ground black pepper
4 slices thinly sliced smoked gouda cheese
4 hamburger buns, split

To make the topping, place a large skillet over medium heat. Cook the chopped bacon until lightly browned but not yet crisp, about 8 minutes. Transfer the bacon to paper towels to drain. Drain all but 2-3 tablespoons of the bacon grease from the skillet. Add the onion to the skillet, season with salt and pepper, cover the pan and cook for two minutes. Uncover the pan, add a splash of water and scrape any browned bits from the bottom of the pan. Cover and cook, stirring occasionally, until the onions are soft and beginning to brown, about 10 minutes.

Stir in the vinegar, mustard, and water. Return the bacon to the pan and bring the mixture to a simmer. Simmer uncovered until the mixture has thickened and most of the liquid has been absorbed, 2-4 minutes. Transfer to a small bowl and let cool slightly. Cover and refrigerate if making in advance.

To make the burgers, finely mince the bacon. Add to a bowl with the ground beef, Worcestershire, salt, and pepper. Mix well. Divide into four equal portions and form into patties about ¾-1 inch thick.

Heat a grill to medium-high heat. Grill to desired doneness, about 4-5 minutes per side depending on preference and grill temperature. When the burgers are almost finished cooking, top with the cheese. Lightly butter each bun and toast on the grill. Assemble the burgers on the toasted buns and topped with the onion jam.

this is just to let you know that we made it back from dinner, and OMG, that was a wonderful meal....

The Chefs tasting, wine dinner, was amazing, I will post picture later but whew...I may never make it out of this food coma....
 
Aimee, the naan is very easy to make. The recipe is from Fine Cooking magazine (it seems like I get all my recipes from Fine Cooking and Ina Garten!). In the original recipe, the naan is stuffed with herbs and paneer, but I did not do that this time because the kids were going to be eating it and they don't like "green flecks" in their food (which is odd because they eat most vegetables!). I have made the herb stuffed naan before though, and it is very good. Here is the recipe:

Grilled Naan
For the dough
1 Ib. 7-1/2 oz. (5-1/4 cups) unbleached all-purpose flour; more as needed 4 tsp. baking powder
4 tsp. kosher salt
2 tsp. granulated sugar
1/2 cup plain whole-milk yogurt
1 large egg
1/4 cup peanut or canola oil; more for brushing


For the filling
1-1/2 cups roughly chopped fresh cilantro
1/2 cup roughly chopped fresh mint
1/4 cup unsalted cashews or blanched almonds
2 cloves garlic, chopped
1 Tbs. chopped fresh ginger
1 tsp. kosher salt
6 Tbs. peanut or canola oil; more as needed for the grill
2/3 cup farmer cheese or queso fresco, crumbled (3-1/2 oz.)
Melted butter for brushing
Kosher salt for sprinkling



Make the dough Combine the flour, baking powder, salt, and sugar in the bowl of a stand mixer fitted with the dough hook. Whisk the yogurt and egg in a medium bowl, then whisk in 1-1/2 cups of lukewarm water and the oil. Pour the egg mixture into the flour mixture and mix on low speed until a soft, sticky dough starts to clump around the hook, about 5 minutes. If the dough seems too wet, add more flour, 1 tsp. at a time. Line a baking sheet with parchment and dust lightly with flour. Turn the dough out onto a lightly floured surface and divide it into 10 equal pieces. Form each piece into a ball and arrange them on the baking sheet. Lightly brush the dough with oil, cover with plastic, and let rest at least 1 hour and up to 2 hours before shaping.


Make the filling
Combine the cilantro, mint, nuts, garlic, ginger, and salt in a food processor. Pulse until the ingredients are finely chopped. Scrape the sides of the bowl, turn the processor back on, and pour the oil through the feed tube, mixing until incorporated. Transfer to a medium bowl.

Make and grill the bread
On a lightly floured surface, roll a dough ball into a 5-inch circle. Spread about 2 tsp. of the filling in the center, leaving a 1/2-inch border. Scatter 1 Tbs. of the crumbled cheese over the filling. Gather the border to form a pouch, pinching it to seal in the filling. Turn the pouch pinched side down and, using very light pressure, roll it into a 6-inch circle. Transfer to a parchment-lined baking sheet. Continue filling and shaping the dough, layering parchment between the breads if you stack them.

Prepare a medium charcoal or gas grill fire. Brush the grill grates with a stiff brush, then wipe with a lightly oiled paper towel. Grill the breads in batches pinched side down, covered, until they look puffy and the undersides brown lightly in places, 2 to 3 minutes. Turn over and cook the other side, covered, until grill marks form and the breads are cooked through, 2 to 4 minutes. Just before taking them off the grill, turn the breads pinched side down and brush lightly with the butter. Sprinkle with a pinch of salt. Cut each bread in half and serve warm.
